Home Cooked Mee Goreng Mamak for Dinner

I home cooked the Mamak Mee Goreng for dinner yesterday after working out with the kids in the gym. The Mamak Mee Goreng is a common item listed in the menu of mostly all the Malaysian restaurants in Vancouver. This is one of the favorite fried noodle cuisine in Malaysia. I guess, I learned this type of fried noodle by watching how the Mamaks (Malay slang for Indian Muslims) does it. After a few times anyone with a little cooking enthuses will learn.

Although, I have cooked this noodle cuisine many times, I feel there is still one thing missing which is the smell of burned noodle. The Mamaks, when frying noodles, turn on their stove fire to the maximum and the heat from the fire burns the noodle in the wok. Here in Vancouver, especially at home, our stove fire is so slow and low pressured. Even worst are those that live in a homes that uses electric stoves.

To make it really authentic and even smell authentic, when frying the Mamak Mee Goreng needs really intense heat. In some of the older coffee shops where there is a Mamak Mee Goreng stall or those that still push a tricycle around the town, still uses a traditional clay stove that uses charcoal as fuel. These are the real deal. Authentic, tasty and flavourful. That is why, in my opinion, the Malaysian restaurants here can not provide authenticity in many of their cuisines.
